What this course covers
This is a one-day, hands-on class for people new to hospitality who want to walk into a trial shift in a restaurant, café or bistro already knowing what to do. Stage 1, the online theory, is where you learn how service works. This class is Stage 2, where you do it. You can do the two stages in either order.
You set up a dining area and set tables, carry plates and a loaded drinks tray, take orders on a docket, serve food to the right seat, and clear and reset a table. You present, open and pour wine using water-filled training bottles, and watch your trainer open sparkling wine safely.
The class ends with a simulated restaurant service where you take turns as waiter, food runner, drinks attendant and customer. It is a chance to practise with feedback, not an exam.
This class does not include Responsible Service of Alcohol (RSA). If your job involves serving alcohol, you also need the RSA your state requires.
Edway Training (RTO 91401) issues your Certificate of Completion when you finish.
- What you'll learn
- Setting up a dining area and stocking a service station
- Polishing glassware and cutlery, and setting bistro and three-course tables
- Folding napkins
- Greeting and seating guests, and taking an order on a docket
- Carrying two and three plates, and a loaded drinks tray
- Serving food to the right seat without reaching across anyone
- Pouring water, and presenting, opening and pouring wine (training bottles)
- Clearing and resetting a table
- Handling a complaint calmly
- A full simulated restaurant service, taking turns in every role
Before you book
Check your English before booking You'll need enough English to take part. There's no formal language, literacy, numeracy and digital (LLND) check for this course — just make sure you're comfortable reading plain English before you book.

How you'll train
In person
A one-day, hands-on class with a trainer. Your trainer demonstrates each skill, then you practise it until it is smooth. Plates, glasses and bottles are practice equipment, so mistakes cost nothing.

The entrance has one step through a standard-width door. There is no alternative entrance.

There is no customer parking on site. Paid parking is available nearby at Wilson Parking and at Secure Parking in Kings Cross. Limited metered street parking may be available. Always check the signs. Parking availability, hours and fees can change, so check the operator's website before travelling.

Enter directly from William Street through the shopfront branded Edway and Training Aid. There is one public entrance.

What happens after you enrol
